I‘ve just had this battery combiner fitted. If I connect my charger (CTEK Multi MXS) to the domestic bank will it also charge the starter battery?

Yes, the Cyrix-ct is bi-directional, so it will charge the starter battery.

But does the OP need to put the engine battery through the same voltage / charge range as the service battery, when the engine is probably not discharged that low ?

The vast majority of boats have a similar charging regime, and don't seem to suffer.
